While we were on a break, we created a new Hot Buzz episode, and grew some hot peppers.
Both Craig and I grew a ton of peppers this summer. Jalepeños, Ghost Peppers, Scorpion Peppers, and Carolina Reapers. We had to figure out things to do with our pepper haul. The first things to ripen in my garden were a bunch of Jalepeños, and two gorgeous brilliant red Carolina Reapers.
Let’s take a look at the scoville ratings of these gentlemen.
- 0 – Bell Peppers
- 100-500 – Sweet pepper
- 1250 – Poblano pepper
- 3750 – Original red Tobasco
- 5000 – Jalepeño
- 50,000 – Cayenne
- 100,000 – Bird’s Eye (Thai) Chili
- 150,000 – Habenero
- 1m – Bhut Jolkola (Ghost Pepper)
- 1.2m – Naga Viper
- 1.5m – 2m – Scorpion Pepper
- 2m-2.5m – Carolina Reaper
On one end of the scale we’ve got some of the mildest peppers, and on the other end, we’ve got the hottest peppers.
We came up with a couple of variations on cool hot sauces. One would be hot, with tons of flavour, while the other would be mild, but sweet and bright tasting. (more…)

Hot Buzz was an idea that Craig and I had inspired by Hot Ones from First We Feast, what if we got together with some folks, ate some chicken spicy chicken wings, and asked some hot marketing questions.
Our very first episode was an experiment in just seeing how we would do a show, and if it could be successful. We live streamed it to Facebook, and Craig created a fun little logo of a bee spewing fire for our initial episode. We didn’t take a lot of time with production or editing, the idea was just to get it out there and see what people thought of it.
We do this with everything that we do. We try things, experiment with them, and over time make them better.
Here’s the thing. If you wait in hiding and polish your idea something perfectly shiny and brilliant you face a few problems. Your idea might never see the light of day, perfect is the enemy of great, and making that perfect thing takes time. You might make something perfect that nobody wants to see. You will invest a ton of time into something that might not work.
This is the recipe for the NorthIQ Hot Buzz Fermented Pepper Sauce, which we are calling Hot Buzz Fermented Pepper Sauce V1.
When I started thinking about what I wanted in a hot pepper sauce, I knew that it was more than just heat. I wanted well rounded, flavourful sauce that would go well on a variety of dishes, but it would be the main event of the Hot Buzz final round.
